And of course entire\u00a0cookbooks have been devoted to soup recipes (take the title of this post, which is the fictional name of a cookbook I refer to in my upcoming novel)&#8211;as though the exact ratio of water to bone really makes that much difference.<\/p>\n<p>No, making soup is more a relationship than a religion. You taste your way into a good pot of soup.<\/p>\n<p>So Mom and I put together a batch only partially following the Mennonite cookbook version some of you might know. Extrapolate on this &#8220;recipe&#8221; based on what&#8217;s in your fridge:<\/p>\n<p>GREEN BEAN SOUP<\/p>\n<p>Combine in pot and simmer till meat is tender:<\/p>\n<ul>\n<li>1 meaty ham bone, 1-2 pounds (we used a chunk of ham steak and a couple of links of smoked sausage)<\/li>\n<li>1 medium onion, chopped<\/li>\n<li>6 cups cold water<\/li>\n<\/ul>\n<p>Remove meat and strain through cheesecloth (or just a sieve, as we did), returning broth to pot and add:<\/p>\n<ul>\n<li>2-3 cups fresh green beans (or yellow&#8211;or even the new purple kind), cut up<\/li>\n<li>3 carrots, sliced<\/li>\n<li>3 medium\u00a0potatoes, cubed (better to use baby\u00a0potatoes and don&#8217;t cut too small)<\/li>\n<li>1\/4 teaspoon peppercorns in spice bag (or a good grinding of pepper straight into the pot)<\/li>\n<li>Salt to taste<\/li>\n<\/ul>\n<p>Simmer till veggies are tender, correct the seasoning, then add and simmer another half-hour:<\/p>\n<ul>\n<li>4 sprigs summer savory (this time we used a handful of fresh dill instead, just added at the end)<\/li>\n<\/ul>\n<p>Cut meat from bone and return to the soup.<\/p>\n<p>Serve with thick, yummy farmer&#8217;s cream or a scoop\u00a0of sour cream (or both!) and slurp away.<\/p>\n<p><a href=\"http:\/\/www.rolledscroll.com\/news\/wp-content\/uploads\/Green-Bean-Soup-2-e1410617394770.jpg\"><img loading=\"lazy\" class=\"alignleft size-thumbnail wp-image-768\" src=\"http:\/\/www.rolledscroll.com\/news\/wp-content\/uploads\/Green-Bean-Soup-2-e1410617394770-150x150.jpg\" alt=\"Green Bean Soup 2\" width=\"150\" height=\"150\" \/><\/a><a href=\"http:\/\/www.rolledscroll.com\/news\/wp-content\/uploads\/Green-Bean-Soup-3-e1410617432860.jpg\"><img loading=\"lazy\" class=\"alignleft size-thumbnail wp-image-769\" src=\"http:\/\/www.rolledscroll.com\/news\/wp-content\/uploads\/Green-Bean-Soup-3-e1410617432860-150x150.jpg\" alt=\"Green Bean Soup 3\" width=\"150\" height=\"150\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 SIMMER, SCOOP, SLURP Soup making is more art than science.
